Baked Beef & Rice

1 1/2 pounds Ground beef
1 cup Rice -- regular
1 small Onion -- chopped
2 tablespoons Bacon drippings
1 1/2 teaspoons Salt
1 teaspoon Paprika
2 ounces Black Olives -- Sliced
2 cups Tomato juice
1 1/2 cups Water -- boiling
1/2 cup Cheese -- Cheddar -- shredded

1. Saute ground beef, rice, and onion in bacon drippings.

2. Pour off drippings.

3. Add remaining ingredients except cheese; mix well.

4. Place in a 1-1/2 quart casserole. Cover tightly; bake at 300 degrees for 1 hour.

5. Uncover; sprinkle with cheese and continue baking about 10 minutes or until cheese is melted.
